Raw Date and Almond Love Slices

Raw Date and Almond Slice Raw Date and Almond Slice served with strawberries Ingredients 1 cup almonds, soaked overnight 2 cups dates, soaked for min an hour  (keep aside 1 cup for topping) 1/2 cup of Cacoa (or carob) powder 2 cups of coconut meat or desiccated 1 cup filtered water Method Add soaked almonds (discard water) – 1 cup of pitted dates, filtered water and cacao or carob.  Blend in thermomix or blender until smooth.  Mix in coconut, then press the mix into a biscuit tray (approx 1 inch thick).  Leave covered in the fridge for 2-3 hours to firm. For topping: process second cup of dates with some water for smooth icing texture in blender.  Spread over base and sprinkle with coconut or nuts of choice.  Rest in fridge then cut into squares or desired shape.
